And that’s what makes it Slider Slaw.
- 8 cups shredded cabbage
- 2 large carrots, grated
- 3/4 cup thinly sliced sweet red bell pepper
- 1/2 to 1 cup thinly sliced red onion
- 1/4 cup mayonnaise
- 1/2 cup plain yogurt or sour cream
- 1 tablespoon Dijon mustard
- 3 tablespoons sweet pickle relish
- Salt and pepper to taste
- 1 cup cocktail peanuts
In a large bowl, toss cabbage, carrots, red bell pepper and red onion together.
In a small bowl, mix together the mayonnaise, yogurt or sour cream, Dijon mustard and pickle relish. Pour over the cabbage mixture. Toss to mix. Season with salt and pepper. Cover and refrigerate until serving time.
Add peanuts just before serving.
Makes about 10 servings.
